The fruit weighs between 300 g and 2 kg and is picked from the tree. It is said to be ripe when its skin is soft to the touch or when its skin has a yellow-orange color.
In everyday life, the mango is used as a fresh fruit eaten as a dessert or in salads. Also it is eaten as dried fruit, and as fruit juice or mango juice.

The mango is a well known fruit in the Malagasy culture, it is translated by the word “manga” in Malagasy language and therefore occupies an important place in the country. The word is used as a first name in the island.
The word mango literally means black or blue in the Malagasy language. A significant number of cities contain the word mango in their name, they are 20.

The best mango recipes.
Mango achard.
The mango achard is a must for mango recipes. It is a ripe green mango peeled and cut into strips and tossed with vinaigrette sauce and onions. It is eaten as an appetizer, most often, and sometimes as a snack or appetizer.
The recipe does not require the mango to be re-cut or cut into a particular shape, as the mango strips follow the shape of the mango. For this reason, it is advisable to make your mango achard with long and pulpy mangoes.
Mango tarte tatin.
The mango tarte tatin is a tart made with mango.
To make the recipe, you will need:
- A puff pastry. I advise you to take it at your usual supermarket, you will find very good quality for 0.85 € (at aldi) to 2.09 € (at casino).
- A glass of sugar.
- A glass of water.
- A glass of butter.
- 2 mangoes.
- A pie pan.
- A large bowl to mix everything.
- A knife.
- A frying pan.
To execute the recipe you must:
- Remove the skin from the mango and cut it into strips.
- Put the sugar in the pan to make caramel.
- Preheat the oven to 225°C.
- Add the mango to the pan with the butter and mix well.
- Spread the dough on the pan and put the caramelized and buttered mangoes on top.
- Bake all for 25 minutes.
Mango Bavarois.
To make the recipe, you will need:
- 5 eggs.
- 450 grams of sugar.
- 100 grams of flour.
- 4 mangoes.
- 165 grams of water.
- 5 leaves of gelatine.
- 20 cl of gelatine.
- 20 cl of kirsch.
- 2 tablespoons of strawberry syrup.
The recipe includes the sponge cake, the mango mousse, the syrup and the mango mirror.
To execute the recipe, you need to:
- Beat 3 egg whites until stiff.
- Mix 100g of sugar, 5 egg yolks and 100 of flour in another container.
- Gently mix the egg whites, flour, sugar and egg yolks.
- Put the mixture in a piping bag with a tip n°10 to form a spiral of 23 cm (4,5 cm high).
- Put it in the oven which has been preheated to 180 ° for about 10 minutes.
- Boil 115g of water, mix with 150g of sugar.
- Add kirsch once scalded.
- Brush the disc out of the oven with the mixture.
- Cut the mangoes in small pieces.
- Put the mangoes on the disc.
- Boil the 50 g of water and 115 g of sugar in a saucepan.
- In a bowl, beat the two egg whites.
- When the water and sugar reach 117°C pour the mixture with the egg white.
- Mix until the meringue cools, then leave in a cool place.
- Whip the 20cl of fresh cream until you have whipped cream with the help of ice cubes.
- Put the three gelatine sheets in cold water for 10 minutes.
- Heat a slice of mango with 150g of sugar in a saucepan.
- Squeeze out the gelatine and mix it all together off the heat.
- Incorporate the Italian meringue and the whipped cream.
- Add the syrup, wait in the fridge for 5 minutes.
- Pour the mousse on the sponge cake and let it rest.
Mango Cheesecake.
For the mango cheesecake recipe you need:
- 225 g cookies 50 g melted butter
- 300 g of plain Philadelphia
- 300 g of mascarpone
- 70 g powdered sugar
- 100 g mango puree
- zest of 1/2 lime
To make the recipe you must :
- Prepare the 20 cm mould by buttering it
- Mix the digestive cookies and the melted butter
- Pour the Piladelphia, the mascarpone, the powdered sugar, the mango puree and zest half a lime with the
- Microplane.
- Whisk the mixture
- Pour over the cheesecake mixture and leave in the refrigerator.
Mango yogurt cake.
To make the mango yogurt cake you will need:
- 100 g white sugar
- 75 g of brown sugar
- 250 g of mango yogurt with pieces
- 70 g of vegetable oil
- 3 eggs
- 1 packet of baking powder
- 1 pinch of salt
- a little vanilla extract
- 185 g of flour
For the preparation:
- Preheat the oven to Th.6 (180°C).
- Mix sugar, yogurt, yeast, eggs, salt and vanilla.
- Add the flour little by little. Add the oil at the end.
- Cut the mango in small pieces and add it to the preparation.
- Pour in a buttered mould.
- Bake for 30 minutes.
